TCHO Chocolate TCHO sources all of its own cocoa beans and makes fine chocolate from scratch. They are local (San Francisco's only bean-to-bar chocolate maker); obsessively focused on quality; and committed to building sustainable partnerships with cocoa farmers. TCHO offers a whole new way to think about chocolate: based on the primary flavors found in pure cacao. Like wine and coffee, chocolate starts life as a fruit with inherent flavors—flavors that come from a combination of genetics and terroir. TCHO refines these flavors as the fruits are fermented and meticulously processed into fine chocolate. The result is a line of distinctive chocolates that represent the flavors of pure cacao (no added fruits or nuts). These flavor notes—like "Fruity" and "Nutty" and "Citrus" —are shown in a Flavor Wheel (a simplified version of the one used for wine tasting). TCHO directly partners with, and invests in, their growers, helping them improve quality so they can earn premium prices. Their TCHOSource program is having a dramatic impact on the cocoa farmers they buy from.
